Chocolate, White, & Marble Cupcakes

I love cupcakes!  I feel so much less guilty eating a few cupcakes than I do eating a large piece of cake!  Plus you always get enough ganache and frosting on a cupcake!!  I bought a cake from a local bakery and absolutely loved it, but I wanted to make it myself at home.  A delicious chocolate cake with chocolate ganache!  But I ended up taking it to the next level by making it into a marble cupcake with chocolate ganache and buttercream frosting.  Next time though I have to admit I think I will try a cream cheese or whipped frosting because the buttercream was a little too sweet with the cake and ganache!


Chocolate Cupcakes
  • 2 cups all-purpose flour
  • 2 cups sugar
  • ¾ cup plus 1 tsp unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1½ teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup whole milk
  • ½ cup unsalted butter, melted
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  1. Add flour, sugar, cocoa, baking powder, baking soda, and salt
    to a large bowl. Whisk through to combine well.img_2139
  2. Beat whole milk, unsalted butter, eggs, and vanilla together.
  3. Add milk mixture to the flour mixture and mix together using a mixer on medium speed until well combined. Reduce speed and carefully add boiling water to the cake batter. ( note that the batter will be very thing after adding the boiling water, that is totally normal and helps the cake to bake up nice and moist.)
  4. Beat on high speed for about 1 minute to add air to the batter. ( This step helps to make the cake light and fluffy!)
  5. Pour batter in cupcake tins. Bake at 350  for 15-18 minutes.
  6. Remove from the oven and allow to cool for about 10 minutes, remove from the pan or tin and cool completely.


White Cupcakes


  • 2 1/4 cups cake flour ( or you can use 2 1/4 cup minus 2 Tbsp all purpose flour and add 2 Tbsp cornstarch to make your own make flour.  Just be sure to mix it together well and sift after)
  • 1 cup whole milk at room temperature
  • 6 large egg whites at room temperature
  • 2 teaspoons almond extract
  • 1 teaspoon vanilla extract
  • 1 3/4 cups granulated sugar
  • 4 teaspoons baking powder
  • 1 teaspoon table salt
  • 1 1/2 sticks unsalted butter,melted


  1. Pour milk, egg whites, and extracts into medium bowl and beat until blended.
  2. Mix cake flour, sugar, baking powder, and salt in bowl of electric mixer at slow speed. Add butter, and continue beating on low for about 1-2 minutes.
  3. Add milk mixture to flour mixture and beat on medium for 2 minutes.
  4. Pour batter into muffin tins.
  5. Bake at 350 for 15-18 minutes.
  6. Allow cupcakes to cool 10 minutes before removing from tin to cool completely.


Marble Cupcakes
1.  Make above cake recipes
2.  Fill each muffin tin with half white cake first then himg_2149alf chocolate cake
3. Bake at 350 for 15-18 minutes, until toothpick comes out clean
4.  Allow cupcakes to cool 10 minutes before removing from tin to cool completely.
 With these cupcakes I topped them with a chocolate ganache and a buttercream frosting!
Bonus tip:  When measuring flour never scoop from the bag directly.  That can lead to having too much flour in your bowl and a heavy or dense dough.  Instead scoop the flour with a spoon into the measuring cup, being sure not to pack it in, and use the flat side of a knife to push off excess flour.
