Fresh Fall Apple Cake

In the fall it is so fun to get fresh apples for a deal!  Nothing like less than .99 per pound!  But I always find myself trying to find things to do with them rather than just eating the img_2760apples.  So this has led to me making large quantities each fall of apple sauce, apple butter, apple pie, apple crisp, apple muffins, and now apple cake!
Apple cake is probably, aside from the apple crisp, my favorite!  Happy Apple Season!
1/2 cup butter, melted
1 cup white sugar
1 egg, beaten
3 apples, peeled and chopped into small pieces
1 cup flour ( you can use wheat flour or if you want gluten free you can use your favorite gluten free mix)
1/4 tsp sea salt or kosher salt
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1.  Preheat the oven to 350.  Grease either 7-8 mini bread pans, a large bread pan, or an 8X8 pan.
2.  In a bowl mix butter and sugar.
3.  Add egg.
4.  Add apples.
5.  Add baking soda, baking powder, salt, and cinnamon.
6.  Add flour.
7. Mix well.
8.  Pour into baking dish and bake for 30 minutes, or until a toothpick comes out clean.
