Homemade Crock Pot Spaghetti Sauce

I love homemade spaghetti sauce!  The amazing flavor of the fresh vegetables just can’t be beaten by store bought sauce!  But sometimes it is just hard to find time to make it on the stove.  So I did some experimenting and have found a great way to make in the crock pot!  Now I just do a bit of chopping and sauteing in the morning and then it slow cooks all day without me doing anything else to it!  Plus this recipe makes enough for leftovers and/or plenty for freezing for another day!
2 Tbsp olive oil
1 onion, chopped
1 bulb garlic, chopped
1 6oz can tomato paste
2 15oz cans fire roasted diced tomatoes ( or regular diced to tomatoes will work well )
1 Tbsp Italian seasoning
1/4 tsp thyme
1/2 tsp basil
1/2 tsp oregano
2 bay leaves
1/2 tsp sea salt
2 lbs ground beef
2 carrots, chopped or grated
1 zucchini, chopped or grated
1 32oz can crushed tomatoes
1.  Heat oil in a skillet.
2.  Saute the onion and garlic until they are fragrant and soft.
3.  If you want a chunky sauce then from here you will put all your vegetables in the crock pot but if you want a thicker sauce with hidden veggies put them into the blender and puree them into a sauce.
4.  Once your vegetables are blended place them in the crock pot add the seasonings and herbs and cook on high for 4 hours.
5.  After 4 hours then set the crock pot to low for 10 hours.  ( The quick heat and then low simmering heat just helps to bring out the flavors)
6.  About an hour before serving cooking the ground beef and add it to the crock pot!
7.  Serve hot with pasta!
