Raspberry Streusel Muffins

I really love raspberries.  But in my family I am the only one.  You see the king berry around here is the blueberry!  So it is blueberry pancakes, blueberry muffins, blueberry jam, etc.  But I decided to try to win some of the kids over to my side with this raspberry streusel muffin recipe!  The great
thing about this recipe is that you can really use any kind of berry you want in place of the raspberries!  I normally make this recipe with blueberries but on an adventurous wim made raspberry muffins…..and you know what…..they were a winner!

Muffins:
1 1/2 cups flour
3/4 cup sugar
1/2 tsp salt
2 tsp baking powder
1/3 cup unsalted butter
1 egg, beaten
1/3 cup milk
1/2 tsp lemon juice
1 1/2 cups fresh raspberries
Streusel Topping:
2 Tbsp white sugar
2 Tbsp brown sugar
3 tbsp flour
3 Tbsp unsalted butter
1 tsp ground cinnamon
Directions:
1.  Preheat the oven to 400 degrees. And combine lemon juice and milk together.  Allow mixture to sit for 10 mins.
2.  In a large bowl cream together butter and sugar.  Add egg and mix well.

3.  Add salt, baking powder, and milk combine well.
4.  Add flour mixing well.
5.  Gently fold in raspberries.
6.  Scoop into muffin tins.
7.  In another bowl Mix topping ingredients:  white sugar, brown sugar, flour, butter, and cinnamon.
8.  Put topping on top of muffin batter.
9.  Bake for 20-25 minutes.
