StoryTime Adventures: If you give a Moose a Muffin

Something I have started doing with my kids is reading a book each week and pairing it with a craft or cooking activity we do together!  This has made story time more fun because they always want to know what we are going to do after and it is a lot of fun family time!IMG_2906.jpg
This week we read “If you give a Moose a Muffin” by Laura Numeroff with Illustrations done by Felicia Bond.  So naturally the only thing to do was make muffins after!  My kid’s most favorite berry is by leaps and bounds the raspberry so we made fresh homemade raspberry muffins with a cinnamon streusel topping.
Muffins:
1 1/2 cups flour
3/4 cup sugarimg_2894
1/2 tsp salt
2 tsp baking powder
1/3 cup unsalted butter
1 egg, beaten
1/3 cup milk
1/2 tsp lemon juice
1 1/2 cups fresh raspberries
Streusel Topping:
2 Tbsp white sugar
2 Tbsp brown sugar
3 tbsp flour
3 Tbsp unsalted butter
1 tsp ground cinnamon
Directions:
1.  Preheat the oven to 400 degrees. And combine lemon juice and milk together.  Allow mixture to sit for 10 mins.
2.  In a large bowl cream together butter and sugar.  Add egg and mix well.
3.  Add salt, baking powder, and milk combine well.
4.  Add flour mixing well.
5.  Gently fold in raspberries.

7.  In another bowl Mix topping ingredients:  white sugar, brown sugar, flour, butter, and cinnamon.
8.  Put topping on top of muffin batter.
9.  Bake for 20-25 minutes.
