I have never been a big fan of traditional beef chili. They tend to be too spicy for me! But a white chicken chili is absolutely delicious!! The best part of this recipe is that it is made in the crock pot! I love it when I can just put ingredients in a crock pot and leave it there the rest of the day! So simple and so delicious!
1 to 2 pounds uncooked chicken breast ( it can even be frozen)
2 15oz cans white beans ( drained)
1 15oz can corn (drained)
1 small sweet yellow onion, chopped finely
2 cloves garlic, chopped finely
3 Tbsp homemade taco seasoning or 1 package taco seasoning
1 can cream of chicken soup
14oz chicken broth
1. Chop your onion and garlic and then saute a few minutes before adding them to the crock pot. By sauteing the onion and garlic before adding them to the crock pot they will have a richer flavor!
2. Add all the ingredients to the crock pot and cook on low for 8-10 hours or high for 4-6 hours.
3. When the chili has finished cooking use a potato masher to break up the chicken and mash some of the beans to make the chili thicker. If it is still a soupy consistency with large chunks of chicken then keep mashing.
Top with cheese, sour cream, lime juice, cilantro, or corn chips!
