I am not a super huge fan of corn syrup. Which is why I was bummed when I found so many recipes available for homemade caramel popcorn using corn syrup.
My son really likes caramel popcorn and for his birthday I was wanting to make him some for movie night! I was already making my Movie Night Chocolate Chex Mix and had half a can of sweetened condensed milk left over. Well I started thinking sweetened condensed milk already tastes a lot like caramel all on it’s own. So I decided to experiment a little!
1/2 can of sweetened condensed milk
1/2 cup brown sugar
1/4 cup butter
1 tsp vanilla
In a microwave safe bowl add butter, brown sugar, sweetened condensed milk, and vanilla. I microwaved for 30 seconds and took it out and stirred. I did that about 3 times. It should be nice and smooth! Be sure not to leave it in the microwave for too long or it will overflow!!! ( That happened to me!!)
Then pour over your popped popcorn and enjoy!!!
