White Cupcakes

I will be honest my favorite kind of cake is hands down chocolate!  But my son doesn’t really care for chocolate so much.  But my son is so thoughtful of others that he wanted both kinds for his birthday so his friends would all have the kind of cake they liked.  And my “cake” I mean mini cupcakes!  This is a super easy white cake recipe that is moist and tasty!

White Cupcakes


  • 2 1/4 cups cake flour ( or you can use 2 1/4 cup minus 2 Tbsp all purpose flour and add 2 Tbsp cornstarch to make your own make flour.  Just be sure to mix it together well)
  • 1 cup whole milk with 1tsp lemon juice at room temperature (this will need to sit for 10 minutes)
  • 6 large egg whites at room temperature
  • 2 teaspoons almond extract
  • 1 teaspoon vanilla extractimg_2163
  • 1 3/4 cups granulated sugar
  • 4 teaspoons baking powder
  • 1 teaspoon table salt
  • 1 1/2 sticks unsalted butter,melted


  1. Pour milk, egg whites, and extracts into medium bowl and beat until blended.
  2. Mix cake flour, sugar, baking powder, and salt in bowl of electric mixer at slow speed. Add butter, and continue beating on low for about 1-2 minutes.
  3. Add milk mixture to flour mixture and beat on medium for 2 minutes.
  4. Pour batter into muffin tins.
  5. Bake at 350 for  15-18 minutes.
  6. Allow cupcakes to cool 10 minutes before removing from tin to cool completely.
